My favorite meal was rice pasta (rigatoni) with chicken sausage and sautéed veggies: red, orange & yellow peppers, artichokes, white onion, garlic, chili peppers and olive oil. Even my daughter, Adora, loved it (minus the meat). I cooked the sausage separately because of Adora's vegetarian diet and sautéed all the veggies in a healthy serving of olive oil. I added a little rock salt and pepper to taste.
Rice was my main staple. I would usually make rice pilaf. I would cook onions (white) in some olive oil until translucent and added the rice to the pain. I would stir the onion and rice mixture until a light golden color than transferred to my rice cooker. I used organic chicken broth instead of water... yummy!!!
This is also one way I sneak extra protein in Adora's diet.
My boyfriend's, Jared, favorite meal (it's a soup but the more chicken and vegetables you add it becomes a stew):
- bake two skinless chicken breasts seasoned with salt & pepper
While chicken is baking, sauté the following in a stock pot:
- one whole white onion or 3 - 4 shallots (prefer shallots)
- 2 medium leeks (white and pale green parts only)
- 3 cloves garlic
- 2 -3 Tablespoons of ginger
Once the onion is translucent, add:
- 2 - 3 stalks of celery
- Small bag of Yukon or red potatoes
- Small bag of carrots (ready to eat - I usually chop them in half)
- pinch rock salt, pepper and 1/2 teaspoon chilies
I usually sauté for 5-10 minutes
- Add chicken broth (I use 2-3 cartons to feed a teenager, man, and me). I cook it on low-medium and have left-overs.
Once chicken breast are cooked and cooled down I shred the chicken and add it to the soup
- Add a healthy helping of fresh chopped parsley.
- Let simmer till veggies are cooked to your liking
Treats or Snacks:
My favorite treats are rice dream ice cream with strawberries or orange & vanilla swirl. Both ice creams are sugar-free. I could only find them at Whole Foods but put in a request for the items at Choices.
Other good snacks include potato wedges with Frank's Hot Sauce and rice crackers with hummus
Rice Flour Products:
Choices on West 16th carries rice flour bread products with no eggs or dairy and sweetened with honey. I love the raisin bread with cinnamon. Very yummy toasted! I find the breads too grainy not toasted. I don't recommend the bread crumbs... they were awful.
The waffles that the booklet suggests are great and a new family favorite but I was surprised to find that the blueberry had soy products!!!!
READ labels! Some rice flour products also contain wheat. Whole Foods carries rice flour wraps but they have wheat!!!!
Fish & Meats:
Jared thinks the salmon pepperoni has more flavor than the turkey pepperoni!!!
Choices sells a chicken salad that has a tropical salsa with no tomatoes for those looking for quick meals on the go!
Whole foods deli had more medi-clear friendly option than the Choices deli. Whole foods have a really tasty quinoa salad and Jared loved the mediclear friendly potato salad.
I chose to shop at Choices because they have a points program. After so many points, you get $20 off your next visit!!!
My favorite way to drink the shake in the morning was with a banana, pineapple juice and coconut milk. I preferred pineapple juice over any other mixer.

Suggested Recipes from Acubalance Clients:
Spinach ice cream
Put one banana in a blender, with one cup of water, half cup of orange juice or a smoothie mix, put two scoops of Medi-Clear (optional), and then put loosely spinach, as much as it fits.
As it starts blend, add gradually another cup of water, and freeze. Banana and orange juice (or smoothie mix, I use the Mango purée from Costco, there is some sugar but not much and there are benefits from the spinach hopefully overriding it, another sign is that I have no-sugar-headache today).
**sugar not ideal on the cleanse. Avoid if possible - try using honey!!
Rice Tapioca English Muffins and Sliced Bread (Kinnikinnick Foods) -delicious!! Found in the freezer section of Choices or Safeway (at City Square)
Suggested serving: slice English muffins into 1/3s and toast till very golden and crisp. The inside stays very soft and fluffy. (Tiny bit of sugar listed in the ingredients but it's not more than what is in a serving of Rice Dream.)
Banana Muffins (sugar, wheat, gluten and dairy free) - tastes like a real moist muffin sweetened with bananas. They are sold in the freezer section of Whole Foods or can be bought fresh from the following bakery:

**They have a thin pizza crust made with manioc (a root vegetable) that tastes great and works well for pizza. They also have various dairy-free soy-free buns. They also have a stand in the Granville Island Market on the 1st weekend of each month.
Ryan Funk's Pizzeria
Use well-cooked rice (lots of water), mix with some rice flour and create a pizza crust and bake for 15 minutes.
Cover with Roasted Bell Pepper Sauce from the mediclear booklet (page 19), add veggies. Meat ok during week one or three. Use humus for dipping or add to the top of pizza.
