Parsley Mint Salad

Light salad for an easy lunch or side plate.
Cooking time/temp: 
20 mins

3 tbs Olive oil

2 Tbps lemon juice

1 tsp mustard

1 minced clove garlic

3 cups cooked quinoa

Salt and pepper to taste

1 pt halved cherry tomatoes

1 diced cucumber

1/2 diced red onion

1/2 cup each chopped parsley and mint

Cooked chicken


In a large bowl, whisk olive oil, lemon juice garlic, salt and pepper. Add 3 cups cooked quinoa, tomatoes, cucumber, onion, parsley and mint.

Toss and top with grilled, cooked chicken
