1 cup of nuts (more if you prefer to make some ahead and keep handy) - cashews work - pistachios (de-shelled) can be nice when looking for a lighter option
1 lime - in season
1/2 tsp Sea Salt/Kosher Salt (or to taste)
Preheat oven to 375 degrees farenheit
Squeeze juice of one lime and use enough to properly coat the nuts
Toss ingredients in a bowl together and arrange flat on a baking tray
Bake/roast in the oven for 10 minutes - watch carefully to avoid burning, the oils in the nuts can get very hot quickly and you just want the nuts to turn toasty golden, not black!
