Ingredients:
1 egg, lightly beaten
½ cup (120 ml) coconut milk or full fat plain yogurt
4 slices Brown Rice OR Sprouted Whole Grain bread
1 cup (240 ml) full fat plain yogurt
2 cups (275 ml) fresh or frozen berries
Grated fresh lemon zest
Serves 2
Instructions:
WHISK together eggs and milk
DIP the bread, one slice at a time into the egg mixture
Over medium heat in a large non-stick frying pan
COOK the bread until the egg is set and the bread is golden brown
SERVE stacks of the bread topped with yogurt and berries
