Citrus Chicken

This week, let's build a colourful meal with the last of winter's veggies while we get ready for the paintbox of summer. Soon, salad bowls full of crunchy, nutty, sweet and tangy ingredients will become one of summer's true pleasures. This week, let's have a colourful and warm grilled meal to say good bye to a beautiful winter in Vancouver. This chicken recipe provides lean protein, lots of vitamin C and the natural anti-bacterial properties of fresh thyme - doubling as a 'spring cold' buster!!
Cooking time/temp: 
Marinate 4 - 8 hours - Grill for approx 10 mins

1 cup fresh squeezed orange juise

2 tbs fresh squeezed lemon juice

4 sprigs fresh thyme

2 sliced cloves garlic

1/2 tsp each sea salt and fresh ground pepper

4 boneless, skinless., organic chicken breasts

Olive Oil 

Chopped chives


Mix orange juice, lemon juice, thyme, salt and pepper in a large covered bowl.

Add chicken and allow to marininate 4 - 8 hours (or overnight)

Brush grill with oil and cook over medium heat for  4 - 5 minutes per side, turning once.


Serve topped with chopped chives.
