Cabbage & Ginger

Ingredients from the Farmer's Market!
Cooking time/temp: 
20 minutes

2 tbsp Safflower oil

2 tbsp Rice vinegar

1 tbsp soy sauce

1 tbsp almond or peanut butter

2 tsp dark sesame oil

1.5 tsp fresg grated ginger

1 samll head shredded cabbage

1 cup trimmed snap peas

1 (6 oz) package baked and chopped tofu

2 grated carrots

1 sliced red bell pepper

3 chopped scallions

Chopped roasted peanuts for topping


In a large bowl, whisk oil, vinegar, soy sauce, nut butter and ginger.

Toss with shredded cabbage, snap peas, tofu, carrots, sliced red bell pepper, scallions.

Garnish with with chopped roasted peanuts.
