Recipe: Soul-Soothing African Peanut Stew
Today definitely feels like fall is in the air. I have heard rumour that later this week it’s going to be summer again, but since I love cooking stews and soups during the fall and feel like I could use a warm hug today, I’m choosing to share this fall-friendly recipe.
I recently made a batch of this beautiful warm stew for a friend in the hospital – before she knew the name of the stew she commented that she felt it warming up her soul... Hence the name!
It’s incredibly easy to make and is completely satisfying. I like the idea of having this dish for Meatless Mondays, as it’s vegan, or with some added organic shredded chicken for an even heartier meal. To be honest, the beans and veggies fill me up, but adding a little brown rice or quinoa on the bottom would also be delish. If you also feel like saying hello to fall today, give this recipe a try.
