SESAME NOODLES

This recipe for sesame noodles is made with low calorie, low carb kelp noodles. These easy-to-make noodles are a delicious, gluten-free side dish on a hot summer's night. They're also perfect for a potluck. If you add a sliced chicken breast, you have a complete meal! Kelp noodles are made from kelp, an edible brown seaweed that contains high amounts of iodine. Clear kelp noodles, the most popular type, have a relatively bland taste, but some brands are crunchy in texture. Kelp noodles are typically used in stir-fries, soups, salads and vegetable dishes.
Ingredients: 

(all can be found at Whole Foods Market)
1 package kelp noodles
¼ cup creamy roasted almond butter
1 tablespoon toasted sesame oil
1 tablespoon toasted sesame seeds
1 tablespoon ume plum vinegar
1 tablespoon honey

Serves 4

Instructions: 

Step 1: Soak kelp noodles in a large bowl of warm water for 30 minutes.
Step 2: Rinse noodles thoroughly, then drain and transfer to a dry bowl.
Step 3: In a separate small bowl, combine almond butter, sesame oil, ume plum vinegar and sweetener.
Step 4: Toss noodles with sauce.
