RUSSIAN KALE AND LEEKS WITH A BIT OF SPICE

Feel free to use any of the many varieties of kale that are available in your market. You could even substitute with Collard Greens and Chard or use mix and match! Wheat and Dairy Free Serves 4 (as a side dish)
Ingredients: 

2 Tbsp. extra virgin olive oil
1 tsp. chili flakes
1 large leek, thinly sliced (use white and pale green parts only)
1 bunch of kale, chopped (cut leaves away from the stem and centre rib)
1 Tbsp. wheat free tamari soy sauce

Instructions: 

In a large skillet, over medium heat
HEAT olive oil and chili flakes until oil shows a shimmer
ADD leeks and SAUTÉ for 2 minutes
ADD kale and Tamari soy sauce
SAUTE another 3-4 minutes.
SERVE warm as a side dish OR
ADD to your green salad as a topping
