Ingredients: 

1 Grapefruit - peeled and sliced into juicy segments

2 large handfuls of baby spinach

1 Diced Avocado

1/2 sliced red onion

Smoked Salmon

Instructions: 

Add 2 handfuls of baby spinach to grapefruit segments. Add avocado, onion and olive oil and toss all ingredients to mix evenly. 
Top with smoked salmon and serve.
