Cilantro Spread

Use this fresh spread as a dip or on toast. Full of iron and anti-oxidants, you will not believe how these superfoods taste all blended together (secret ingredient: pumpkin seeds!!!! Pumpkin seeds have more iron than any other single veggie - 76% of our daily nutritional need). This recipe can also be used as a sauce or as a salad dressing if you thin it out with a little oil (walnut or sesame oil works really well).

Ingredients: 

1 - 3 cloves garlic

1/2 cup toasted pumpkin seeds

2 tsp sea salt

1/4 tsp chili powder (or more - to taste)

4 cups fresh cilantro (packed - about 1 bunch with stems)

juice of 2 limes

1/3 cup olive oil

thin with a small splash of water until you acheive desired consistency

 

Instructions: 

Process garlic, toasted pumpkin seeds and salt in food processor. Add chili and mix. Add cilantro and lime juice and then olive oil and drops of water until it is the right texture.
