"Chocomole" - Jason Mraz's Vegan Avocado Chocolate Pudding

A delicious way to enjoy (vegan) chocolate pudding - the richness comes from the avocados. We all need to source greens and healthy fats in January to try to eat clean, avoid bad fats and top up on nutrients - not always that easy to do during a dark and rainy winter month. This recipe delivers.
Cooking time/temp: 
15 minutes
Ingredients: 

1 cup almond or coconut milk

1/4 cup cocoa powder

1/4 cup pure maple syrup 

3 diced avocados

16 chopped and pitted dates

 

Instructions: 

Blend dates with almond or coconut milk, vanilla extract until quite creamy

Add avocados and blend some more.

Add cocoa powder and blend again.

Optional: add more maple syrup at the end and continue blending for texture and taste.
