1 lb asparagus, trim the ends
2 lemons - squeeze out and keep all the juice
2 tbls olive oil
1 tbls garlic minced (optional)
2 -3 tbls parmesan
salt and pepper to taste
Wash asparagus and marinate in mix of lemon juice, olive oil, parmesan, garlic, salt and pepper for minimum 30 minutes or overnight in fridge.
Preheat oven to 350 (f)* and lay asparagus on tin-foil lined baking sheet. Cook for 15 minutes or until slightly crispy. Can be dipped into balsamic glaze (or dip of your choice) and eaten as finger food!
