Food Cures - Sweet Potato & Kale Curry
Sweet Potato & Kale Curry
*Serves 5-6
3 Tbsp. Organic Ghee or Extra-virgin Coconut Oil
2 medium Leeks or Red Onions, diced
2 Cloves of Garlic, crushed (optional)
1 Tbsp Ginger, freshly grated
2 Tbsp Madras Curry Powder or Fresh Curry Paste
3-4 Sweet Potatoes or Yams, peeled & diced
1 large head of Kale, chopped
Unrefined Sea Salt, to taste
Juice of 1-2 Lemons

In a large stainless steel saucepan or pot, heat the ghee or coconut oil and sauté the onions, garlic & ginger until the onions are transparent.

Stir in the curry paste or powder and sweet potatoes or yams, reduce heat and cover to allow the sweet potatoes to simmer until they are soft, stirring them often to avoid sticking.

When the sweet potato or yams are cooked, stir in the kale 2 cups at a time, and cover again, just until the chopped kale has wilted. This will only take a few minutes.

Season with salt to taste and add the lemon juice right before serving.

To improve on my customer centered care, stop smoking and
look after my body, I decided to do the mediclear cleanse. I wanted to be more
support for our clients while getting healthy myself. I spent a few weeks
mentally preparing myself and my boyfriend, Jared, for the cleanse. We were
both ready to get our health on track, until Jared read how many weeks we would
be on cleanse and what foods we would need to eliminate! No wheat, dairy,
caffeine or tomatoes to name a few. Wait, what? No tomatoes? What is wrong with
tomatoes? I am sorry but even my teenage daughter knows I don't do morning
without a cup of coffee. Just when I thought I might have it hard, I was
reminded that Jared is a restaurant manager and was surrounded by all the
temptations that he was supposed to avoid. A predicament that he referred to as
his own personal hell. This might be more than we bargained for. Still, for the
sake of cleaning out the filthy cluttered attic that we called our bodies, we
pressed on. Strange how we felt we were about to be deprived for three weeks
not realizing we were actually about to feast on delicious and healthy foods
and getting more energy!
